Nourishing Change: Bringing the 21-Day Vegan Kickstart to Cayuga County

Change often begins with a single, intentional choice—what we put on our plates, how we treat our bodies, and how we care for one another. That’s why I’m thrilled to announce that I’m becoming a licensed instructor for the 21-Day Vegan Kickstart, a powerful plant-based program created by the Physicians Committee for Responsible Medicine (PCRM) and soon to be offered in partnership with Cayuga Community Health Network.

This isn't just about food. It's about equity, access, and transformation.

The 21-Day Kickstart is a science-backed, deeply compassionate program designed to introduce people to the power of a plant-based lifestyle. Over three weeks, participants learn how whole, plant-centered foods can support heart health, stabilize blood sugar, improve energy and mood, and foster a stronger sense of connection—both to the earth and to themselves.

As someone who has experienced these shifts firsthand during my own 21-day journey, I can say that each meal became a moment of mindfulness. And now, I’m honored to help others experience those same “marble moments”—those unexpected, grounding realizations that change starts with care.
